Sous-vide, meaning "under vacuum" in French, is cooking method in which food is vacuumed and slow cooked, at low-temperatures between 50°- 95°C, using steam. This preserves nutrients and vitamins, and intensifies the natural flavours of the dish.
Siemens combination ovens and steamers with sous-vide functionality have a high precision of the temperature curve to maintain exact temperatures. These appliances can be supplemented with a Siemens vacuum drawer to create a dedicated sous-vide station in your kitchen.
It is important to choose an oven that has sufficient cooking space but also fits the space available in your kitchen. For seamless built-in kitchen designs, there are more possibilities than the standard 60 x 60cm niche for the oven.

- Steamers: 60cm x 45cm (38 litres)
For built-in kitchen designs, another option is to combine multiple 60cm wide appliances next, horizontally or vertically. For example, placing a built-in steamer and built-in microwave next to the oven gives you more cooking options and capacity. 45cm high steamers can be optimally combined with 15cm high warming or sous-vide drawers.
